Triple Truffle Mac & Cheese
This Triple Truffle Mac and Cheese is a luxurious twist on a classic comfort food favourite.
INGREDIENTS:
300g macaroni pasta (or any shape of your choice)
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded cheese (a combination of sharp cheddar, Gruyère, and Parmesan works well)
2 tablespoons Black Truffle Olive Oil
1 teaspoon Black Truffle Sea Salt
1 teaspoon Black Truffle Seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
METHOD:
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
- Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes until the roux is golden brown and fragrant.
- Add the Milk: Gradually pour in the whole milk while whisking continuously to prevent lumps from forming. Cook the sauce, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes.
- Add the Cheese: Reduce the heat to low and gradually add the shredded cheese to the sauce, stirring until melted and smooth. For the best texture, add the cheese a handful at a time, allowing each batch to melt completely before adding more.
- Season with Truffle Flavours: Stir in the black truffle oil, black truffle sea salt, and black truffle seasoning until well combined. Adjust the seasoning with salt and pepper to taste, if needed. The truffle flavours should be rich and aromatic, adding depth to the cheesy sauce.
- Combine with Pasta: Add the cooked macaroni to the truffle cheese sauce, stirring until the pasta is evenly coated with the creamy mixture.
- Crisp the top: Place the macaroni back in the oven, positioning it high up near the grill, and set to 200°C for 10 minutes to crisp the top. Once it's golden brown and crispy, sprinkle truffle seasoning over the top for that final touch.
- Serve: Transfer the Triple Truffle Mac and Cheese to a serving dish or individual bowls. Garnish with chopped fresh parsley and an extra sprinkle of Black Truffle Seasoning!
P.S. Triple Truffle Mac & Cheese Shortcut! Save time by starting with frozen microwave mac and cheese. Just defrost in the microwave, transfer to an oven tray, and pop under a hot grill for 10 minutes. Finish with a sprinkle of truffle seasoning. Total time: 15 minutes!
