Perfect for lunch or a light dinner, this recipe combines the savoury richness of chicken with the delicate, aromatic essence of white truffle oil.

Ingredients:

¼ roasted chicken breast (about 100g)
2 cups lettuce (washed and dried)
¼ cup feta cheese (crumbled)
1 tablespoon white truffle oil
Lemon Myrtle Kawakawa Olives (optional)

Instructions:
1. Wash and dry the lettuce, then place it in a large salad bowl.
2. Slice the chicken breast and layer it on top of the lettuce.
3. Crumble feta cheese over the salad.
4. Drizzle white truffle oil on top.
5. Add some Lemon Myrtle Kawakawa Olives for a fresh, zesty kick (optional).
6. Serve and enjoy.
