This Olive Stuffed Chicken is packed with flavour, easy to make, and feels just fancy enough to impress without any extra fuss. It’s the kind of dish that works for a quick weeknight dinner but also makes you look like a pro in the kitchen.

INGREDIENTS:

2 chicken breasts
1/4 cup green olives, chopped
1/4 cup cream cheese
1 tbsp olive oil
Salt and pepper to taste
1/2 tsp garlic powder (optional)
1/2 tsp paprika (optional)
1/4 cup chicken broth or white wine (optional, for extra moisture)

METHOD:

1. Cut a pocket in each chicken breast and stuff with the chopped olives and cream cheese mixture.
2. Season both sides of the chicken with salt, pepper, garlic powder, and paprika if using.
3. Heat olive oil in a pan over medium heat.
4. Cook the chicken for 6-7 minutes per side until golden brown and cooked through.
5. If you want extra juiciness, pour in chicken broth or white wine and let it simmer for 2-3 minutes while scraping up any browned bits from the pan.
6. Rest & Serve:Remove the chicken from the pan and let it rest for 5 minutes before slicing.
