INGREDIENTS:

1 lb (450g) large prawns, peeled and deveined (tails on)
2 tablespoons olive oil
1 teaspoon Manuka Smoked Chili Salt (or to taste)
1 lemon, halved
Freshly ground black pepper, to taste
Fresh herbs (like parsley or cilantro) for garnish

METHOD:

1. Heat your grill or BBQ to medium-high heat.

2. In a mixing bowl, toss the prawns with olive oil, Manuka Smoked Chilli Salt, and a pinch of freshly ground black pepper. Ensure all prawns are well coated with the seasoning.

3. Place the seasoned prawns on the preheated grill. Cook for 2-3 minutes per side, or until the prawns turn pink, opaque, and slightly charred.

4. While the prawns are cooking, place the lemon halves cut side down on the grill. Grill for about 2 minutes or until lightly charred.

5. Remove prawns from the grill and transfer to a serving platter. Squeeze the grilled lemon over the prawns and garnish with fresh herbs. Serve immediately.
